Mediterranean Chicken Antipasto Pasta Salad

This is a make-ahead pasta salad, making it an ideal lunch or party dish. Since chives are the only fresh ingredient—and they can easily be omitted—you can prepare it the day before and have one less thing to worry about when guests arrive.

We recently served it at a baby shower alongside turkey and brie sliders with cranberry spread, and it made the perfect combination for an easy, satisfying meal.

Antipasto dressing

Ingredients

  • 6 tbsp good quality olive oil extra virgin
  • 3 tbsp white wine vinegar or apple cider vinegar
  • 3 tbsp lemon or lime juice freshly squeezed
  • 1 tsp dijon mustard
  • 1 1/2 tsp honey
  • 1 garlic clove minced
  • 2 tsp dried oregano
  • 1 tsp thyme
  • 1/4 tsp sea salt
  • 1/8 tsp freshly ground black pepper

Instructions

  • Whisk together olive oil, vinegar and juice. Once the ingredients are combined add remaining ingredients and whisk again.

Ingredients

  • 1 lb fusilli pasta
  • 2 oz sun-dried tomatoes, julienne cut coarsely chop
  • 1 cup roasted red peppers jarred is fine
  • 3/4 cup pitted kalamata olives sliced in half
  • 1/2 cup sliced pepperoncini
  • 8 oz fresh mini mozzerella balls
  • 1 1/2 lb poached chicken cut in bite sized pieces
  • 1/4 cup fresh chives chopped
  • 1/2 cup shaved parmesan
  • 1 1/4 tsp sea or kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1 recipe dressing

Instructions

  • Boil pasta according to directions. Drain and rinse.
  • Add the remaining ingredients and stir.
  • Add dressing and mix.

Notes

This can be made the day before. If making in advance, add the chives at the last minute.
