

These zucchini balls are absolutely delicious and perfect for entertaining, since the batter can be made ahead of time. They pair beautifully with Tzatziki dip and Traditional Greek Meatballs, making them ideal for a tapas-style spread or as delightful appetizers before a Mediterranean meal.
Greek Zucchini, Parmesan & Feta Balls

Ingredients
- 2 cups zucchini grated and squeezed
- 6 oz feta crumbled
- 8 oz parmesan freshly grated
- 2 green onions chopped
- 1/4 cup fresh dill or chives chopped
- 1/4 cup fresh mint chopped
- 2 eggs whisked
- 1/2 tsp sea or kosher salt
- 1/4 tsp fresh grated pepper
- 1 cup flour extra for dusting
- 1 cup plain panko
- 2 tbsp baking powder
- 2 tbsp extra virgin olive oil
Instructions
- Mix in a large bowl, zucchini, parmesan, onion, herbs, eggs, and seasonings.

- Add the flour and panko and mix to combine.
- Mix, preferably with your hands.
- You can make this mixture in advance, even the day before and refrigerate until ready to fry.
- Make the mixture into 2 inch balls and dust with flour.
- Put 1 tbsp oil into a non-stick fry pan. Once the oil is hot, fry the balls, turning several times until they get a nice brown coating. Let cool slightly before serving.

- Serve with Tzatziki.
