Greek Zucchini, Parmesan & Feta Balls

Ingredients

  • 2 cups zucchini grated and squeezed
  • 6 oz feta crumbled
  • 8 oz parmesan freshly grated
  • 2 green onions chopped
  • 1/4 cup fresh dill or chives chopped
  • 1/4 cup fresh mint chopped
  • 2 eggs whisked
  • 1/2 tsp sea or kosher salt
  • 1/4 tsp fresh grated pepper
  • 1 cup flour extra for dusting
  • 1 cup plain panko
  • 2 tbsp baking powder
  • 2 tbsp extra virgin olive oil

Instructions

  • Mix in a large bowl, zucchini, parmesan, onion, herbs, eggs, and seasonings.
  • Add the flour and panko and mix to combine.
  • Mix, preferably with your hands.
  • You can make this mixture in advance, even the day before and refrigerate until ready to fry.
  • Make the mixture into 2 inch balls and dust with flour.
  • Put 1 tbsp oil into a non-stick fry pan. Once the oil is hot, fry the balls, turning several times until they get a nice brown coating. Let cool slightly before serving.
  • Serve with Tzatziki.
