Mix in a large bowl, zucchini, parmesan, onion, herbs, eggs, and seasonings.
Add the flour and panko and mix to combine.
Mix, preferably with your hands.
You can make this mixture in advance, even the day before and refrigerate until ready to fry.
Make the mixture into 2 inch balls and dust with flour.
Put 1 tbsp oil into a non-stick fry pan. Once the oil is hot, fry the balls, turning several times until they get a nice brown coating. Let cool slightly before serving.
Serve with Tzatziki.
