We pride ourselves at The Simple Celebration by posting simple, tasty recipes and this may be our simplest yet!  Just one ingredient, a few minutes in the pan, and a delicious, crispy side is ready.  These crisps are very versatile – serve them along with your main entrée instead of bread, add them to a cheese board, use them on top of soups, or serve them with your salad course.  However you choose to use these crisps, we guarantee they will become a staple on your simple celebration table!

P.S.  Using pre-shredded cheese will make this recipe even more simple 🙂

Parmesan Crisps

Ingredients

  • 3/4 cup parmesan cheese shredded (see note below)

Instructions

  • Divide cheese into four rounds in the pan.
  • Cook over medium-high heat for a few minutes until lightly brown, gently flip, and brown the other side.
  • Turn off heat and let sit in pan to harden.

Notes

If you want a more dense crisp, use more cheese per round.

Layered chicken cutlets

Ingredients

  • 2 boneless chicken breast halves about 1 pound
  • 2 egg whites slightly beaten
  • 1 large ripe tomato sliced thinly into 6 slices
  • 1/4 cup fresh basil sliced
  • 1/2 avocado thinly sliced
  • 1 cup freshly grated parmesan cheese
  • 1/2 cup Italian panko bread crumbs
  • 2 Tbsp olive oil more for drizzling
  • Balsamic vinegar for drizzling
  • 2 lemon wedges
  • Freshly ground pepper and salt

Instructions

  • Place three tomato slices on two dinner plates.  Next layer basil and avocado.  Sprinkle with salt and pepper and drizzle with olive oil and balsamic vinegar.          
  • Slice each of the chicken breasts in half, lengthwise with a serrated knife.
  • Mix the parmesan cheese and panko on a plate.
  • Slightly beat the egg whites in a small bowl. Dip the chicken into the egg whites and then press into the parmesan mixture.
  • Heat olive oil over medium high heat.
  • Place chicken breasts in hot oil and cook about 2-3 minutes on each side, until chicken is cooked through.
  • Place 1-2 chicken breasts on top of avocados and serve with lemon slices.

Notes

The only thing you need to serve with this entrée is good bread!

One of the hassles of preparing polenta is having to constantly stand over the stove and stir the pot until you get the desired consistency.  This recipe, thanks to our friend Mary Jo, is baked in the oven and comes out perfect every time!

Easy, Foolproof Polenta

Course Side Dish

Ingredients

  • 1 cup polenta
  • 4 cups chicken broth
  • 1/6 cup cream
  • 1/2 cup parmesan cheese or blue cheese

Instructions

  • Preheat oven to 350°.      
  • Mix polenta and broth in a 9 x 9 baking pan.
  • Bake for 40 minutes, stir, then bake for an additional 10 minutes.
  • Remove from oven and stir in cream and cheese.

Plum and Mascarpone Crostini

Course Appetizer
Cuisine Italian

Ingredients

  • Baguette sourdough works great
  • 8 ounces Mascarpone cheese
  • 4-5 plums thinly sliced
  • Fresh mint
  • 1/2 cup Parmesan cheese grated
  • Balsamic glaze

Instructions

  • Cut the baguette into 1/2" slices and spread with mascarpone cheese.    
  • Place plum slices on top, followed by parmesan, mint, and a drizzle of balsamic glaze.

Notes

Pour a nice crisp Chardonnay and let the celebration begin!

Red Grapefruit, Arugula and Parmesan Flatbread Salad

Ingredients

  • 5 ounces arugula
  • 3 Tbsp balsamic vinegar
  • 2 red grapefruits peeled and segmented (all pith removed)
  • 1/2 - 3/4 cup shaved parmesan cheese
  • black pepper to taste
  • 2 flatbreads
  • 1/3 cup parmesan cheese finely grated
  • 2 cup olive oil

Instructions

  • Combine arugula, balsamic vinegar, grapefruit, parmesan shavings and pepper in a bowl.  Set aside.  
  • Cut the flatbread into 16 equal crosswise slices.
  • Combine grated parmesan and oil and brush over one side of bread strips.
  • Broil for 35-45 seconds or until golden.
  • Turn bread and brush with parmesan mixture and broil one more minute.
  • Cross 4 bread strips on each serving plate.  Top with arugula mixture and serve.
