Spiced Apples

Ingredients

  • 4 Granny Smith apples peeled and cut in fairly large slices
  • 1 1/2 Tbsp unsalted butter
  • 1/3 cup shallots minced
  • 1 cup apple cider
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cup Calvados (apple liquor) if you don't use increase apple cider by 1/4 cup
  • 1 Tbsp honey
  • 1 Tbsp brown sugar

Instructions

  • Melt butter in a large non-stick frying pan.
  • Add shallots and sauté for about 2 minutes.
  • Add apples and cook until they start to get soft.
  • Add the remaining ingredients and cook until most of the liquid has evaporated and thickened.

Dry Rub Pork Tenderloin**

Ingredients

  • 2 1/2 pounds pork tenderloin
  • 1 Tbsp smoked paprika
  • 1/2 Tbsp ground corriander
  • 1 tsp celery salt
  • 1/8 tsp cayenne pepper
  • 1/8 tsp ground cinnamon
  • 2 Tbsp olive oil

Instructions

  • Take pork tenderloin out of the refrigerator one hour before grilling.
  • Combine all spices in a small bowl.
  • Brush olive oil over both pieces of pork tenderloin. Sprinkle spices over pork and rub in with your fingers.
  • Heat grill and place tenderloins on grates.* Grill until internal temperature reaches 150°F. Let rest for 10 minutes until carving into 1/2 inch slices.

Notes

*You can also bake the pork tenderloin in a preheated 350-degree oven.  Prior to baking, sear the pork in olive oil until brown on all sides. Place in the oven and cook for around 20-25 minutes until the internal temperature reaches 150 degrees.

Apple, Berry, & Chocolate Crumble

Servings 6

Equipment

  • 6 - 1/2 cup ramekins

Ingredients

  • 2 Granny Smith apples peeled and diced
  • 10 ounces fresh berries such as blueberries, raspberries, blackberries
  • 1 Tbsp sugar
  • 3/4 cup flour
  • 5 ½ Tbsp unsalted butter additional for the top of crumble
  • 1/8 cup old fashioned oats
  • 1/4 cup hard packed brown sugar
  • 1 Tbsp grated dark chocolate

Instructions

  • Preheat the oven to 350°.         
  • Place apples and berries in a bowl and mix with the sugar.  Fill the ramekins halfway with the sweetened fruit.
  • Using a food processor or a bowl and pastry cutter, add all the remaining ingredients, except the chocolate.
  • Once combined, add the chocolate to the crumble mix and place on  top of the fruit.
  • Place a small pat of butter on top of each crumble and bake for 30 minutes until fruit bubbles.
  • Serve alone or with whipped cream or ice cream.

Cold and refreshing, this white sangria is the perfect summer cocktail.

“This is the best white sangria I’ve ever tasted!” exclaimed Vicki’s husband, Skip.  It’s true, this sangria recipe turned out better than we expected.  Oftentimes white sangrias are too sweet, but this is deliciously crisp and fresh.  Make a pitcher (or two) for your next summertime get together.

Summertime Sangria

Ingredients

  • 1 bottle dry white wine Chardonnay
  • 2 Tbsp Calvados apple brandy
  • 3 Tbsp Cointreau orange liqueur
  • 2 Tbsp sugar
  • 1 cup seedless green grapes
  • 1 kiwi peeled and sliced
  • 1 green apple sliced
  • 1 white peach sliced
  • 1 1/2 cups bottled sparkling water

Instructions

  • Pour wine into a large glass pitcher.  
  • Add Calvados, Cointreau, sugar, grapes, kiwi, and apple.  
  • Cover and refrigerate for 4-5 hours.  
  • Add peach the last hour.  
  • To serve, stir well, add sparkling water and pour over ice in tall glasses.  Garnish with mint or basil.
