Peaches and Cream Pound Cake Delight

This peaches and cream dessert is perfect for summer gatherings or as a special treat on a warm evening. The creamy filling and fresh peaches atop pound cake make it a delightful dessert that will impress your guests!  For a lighter dessert put the peaches in a glass bowl and top with the cream.

Peaches and Cream Pound Cake Delight

Ingredients

  • 6 ounces mascarpone cheese
  • 3.5 ounces whipping cream
  • 2 Tbsp confectioner's sugar
  • 1/2 tsp vanilla bean paste
  • 3/4 cup peach brandy
  • 1/2 cup brown sugar
  • 1 peach sliced
  • 4 slices pound cake
  • mint leaves optional

Instructions

  • Place the mascarpone cheese, whipping cream, sugar and vanilla in a stand mixer. Whip until soft peaks form. Set aside
  • Heat the brandy and brown sugar over low heat until sugar dissolves. Add peaches and simmer until brandy coats the peaches.
  • Place pound cake on 4 plates. Top with cream mixture and then peaches. Garnish with fresh mint leaves. Serve warm.

Notes

Blueberries and blackberries also work well in this dessert.
