Peaches and Cream Pound Cake Delight

mascarpone cheese

vanilla bean paste

peach brandy

brown sugar

peach

pound cake
mint leaves

Instructions
Place the mascarpone cheese, whipping cream, sugar and vanilla in a stand mixer. Whip until soft peaks form. Set aside
Heat the brandy and brown sugar over low heat until sugar dissolves. Add peaches and simmer until brandy coats the peaches.
Place pound cake on 4 plates. Top with cream mixture and then peaches. Garnish with fresh mint leaves. Serve warm.
Notes
Blueberries and blackberries also work well in this dessert.
