Peaches and Cream Pound Cake Delight

Ingredients
- 6 ounces mascarpone cheese
- 3.5 ounces whipping cream
- 2 Tbsp confectioner's sugar
- 1/2 tsp vanilla bean paste
- 3/4 cup peach brandy
- 1/2 cup brown sugar
- 1 peach sliced
- 4 slices pound cake
- mint leaves optional
Instructions
- Place the mascarpone cheese, whipping cream, sugar and vanilla in a stand mixer. Whip until soft peaks form. Set aside
- Heat the brandy and brown sugar over low heat until sugar dissolves. Add peaches and simmer until brandy coats the peaches.
- Place pound cake on 4 plates. Top with cream mixture and then peaches. Garnish with fresh mint leaves. Serve warm.
Notes
Blueberries and blackberries also work well in this dessert.
