Seven simple ingredients go into the food processor and this appetizer is done! A perfect make-ahead dip for your simple celebration. We served it with pita bread and rainbow carrots, but you could use whatever you have on hand – crackers, fresh veggies, breadsticks, etc.
White Bean and Basil Dip
Servings: 4
Ingredients
- 1 can cannellini beans drained
- 1 head roasted garlic cloves see note below
- 1/2 cup fresh basil chopped
- 1 Tbsp fresh chives chopped
- 1 Tbsp olive oil
- 2 Tbsp fresh lemon juice
- 1 tsp cumin
Instructions
- Place all ingredients in a food processor and process until smooth.
- Place in a bowl and drizzle with olive oil.
- Serve with pita bread and mini rainbow carrots.
Notes
For roasted garlic - cut off the top of garlic head, sprinkle with olive oil, salt and pepper. Wrap in aluminum foil and roast for 40 minutes in a 400-degree oven. Let cool. Squeeze the cloves out of the garlic head.
