Place all ingredients in a food processor and process until smooth.
Place in a bowl and drizzle with olive oil.
Serve with pita bread and mini rainbow carrots.
Notes
For roasted garlic - cut off the top of garlic head, sprinkle with olive oil, salt and pepper. Wrap in aluminum foil and roast for 40 minutes in a 400-degree oven. Let cool. Squeeze the cloves out of the garlic head.
