This salad is an adaptation of our delicious Mediterranean Rice Salad recipe (click for recipe).  It’s a tasty start to any simple celebration!

Mediterranean Salad Side Dish

Ingredients

  • 5 ounces fresh spinach
  • red bell pepper diced
  • 3/4 cucumber peeled, seeded and diced
  • 3 green onions sliced
  • 8 ounces feta cheese crumbled
  • 1/3 cup kalamata olives sliced
  • 1/8 cup fresh lemon juice
  • Tbsp olive oil
  • 1/2 clove garlic minced
  • 1/4 tsp dried oregano
  • 1/2 tsp salt
  • 1/8 tsp fresh ground black pepper
  • 1/8 tsp red pepper flakes

Instructions

  • Place spinach, red pepper, cucumber, and green onion in a bowl. Combine.
  • Place spinach mixture onto individual salad plates.
  • Top each plate with Feta and sliced olives.
  • For the dressing, combine the lemon juice, olive oil, garlic, oregano, salt, black pepper and red pepper flakes. You can serve this on the side in one bowl, or pour some over each plate.
