Having some friends or family over for an afternoon of swimming? Make this deli pasta salad in the morning and lunch will be on the table in no time. Also, there is no mayonnaise in this recipe which makes it is a great dish to take to the beach or on a picnic!
Deli Pasta Salad
Servings: 10
Ingredients
- 16-24 ounces spiral multi colored pasta
- 8 ounces salami sliced in thin strips
- 8 ounces cheddar cheese sliced in thin strips
- 1 cup fresh grated parmesan cheese
- 1 red or orange bell pepper sliced in thin strips
- 1 small red onion sliced in thin strips
- 1/2 cup sliced olives
- 2/3 bottle or more of Italian dressing - we like Paul Newman's
Instructions
- Cook pasta al dente, drain and rinse with cold water - make sure pasta has cooled before adding remaining ingredients.
- Stir everything together before adding dressing.
- Season with salt and pepper.
Notes
Serve with nice Chardonnay or Sauvignon Blanc and a baguette.
