What’s for Dessert? Stone Fruit and Berry Cobbler!

This is a wonderful summer dessert and a great way to get fruit into those picky eaters!  Make it well ahead of when you want to serve as it needs to cool and set for about an hour.

Stone Fruit and Berry Cobbler

Ingredients

  • 4 cups fresh blueberries raspberries, and/or blackberries
  • 4 cups fresh peaches and or plums pitted and sliced
  • 1 cup sugar
  • 2 Tbsp cornstarch
  • 1 1/2 tsp lime zest
  • 2 Tbsp fresh lime juice
  • 1/8 tsp kosher salt

Topping

  • 1 cup old fashioned quaker oats
  • 1/3 cup flour
  • 1/4 cup brown sugar
  • 1/2 tsp kosher salt
  • 1 stick unsalted butter chilled and cut in small cubes

Instructions

  • Preheat oven to 375 degrees.
  • In a large bowl, add fruit, sugar, cornstarch, lime zest, lime juice and 1/8 t. kosher salt and carefully stir.  Place in a ceramic 9 X 11 inch pan.
  • Place all topping ingredients in a bowl.  Using fingers, work mixture until the crumbles are pea sized.  Place over berries.  
  • Bake for 60 minutes or until mixture is bubbling.  
  • Let cool and set for about an hour.  

Notes

Serve with vanilla or caramel ice cream.

  1. Mmm – in Australia this is called a crumble, and the ultimate dessert for cold wintery nights (like at the moment – 5 degrees celcius last night!) – it’s also great using apples and/or rhubarb. Yummo – another great recipe, thanks Simple Celebration!
