  • muffin liners, paper or silicone

Ingredients

  • 12 oreo cookies
  • 2 tbsp butter melted
  • 12 oz cream cheese, softened not in the tub, but in the package
  • 2 eggs
  • 1/3 cup sugar
  • 1/4 cuo heavy cream
  • 1/4 cup sour cream
  • 1/2 tsp vanilla paste
  • 1/8 tsp kosher salt
  • 1/2 cup mini chocolate chips or peanut butter chips or caramel bits or a combination
  • caramel or chocolate sauce or a combination
  • additional chips for garnish

Instructions

  • Preheat oven to 325 degrees. Use 12 silicone muffin cups or line a muffin tin with 12 paper liners.
  • Crush oreos in a plastic bag with a rolling pin.
  • Put crumbs in a bowl and add the melted butter and combine.
  • Add the crumbs to the muffin tin and press down using the back of a spoon.
  • In a large mixing bowl, beat cream cheese until fluffy. Add eggs and sugar and beat again. Add the heavy cream, sour cream, vanilla, and salt and beat until smooth.
  • Stir in the chips and add the mixture to the muffin tins. If you want to make a combination of cheesecakes put 1/3 of the mixture in 3 separate bowls. Add the chips to each bowl depending on the flavor profile you want - chocolate chip, peanut butter chip, caramel chip or a combination. Divide between muffin tins.
  • Bake about 20 minutes.
  • Refrigerate for about 2 hours.
  • This can be frozen at this point if you want to serve them at a later date.
  • Add sauce (1/4 cup or so). Microwave until it is easy to drizzle. Around 10-15 seconds. Drizzle over mini cheesecakes and top with additional chips.
