Spicy Jalapeño Poppers

bulk sausage - like Jimmy Dean

shredded cheddar cheese

Instructions
Preheat oven to 400℉
Cut each jalapeño in half, lengthwise. Remove seeds and save.
Fry the sausage and drain on a paper towel.
Mix in a bowl, cream cheese, sausage and cheddar cheese. For extra spicy poppers, add some of the reserved seeds.
With a teaspoon, put the cream cheese mixture in each shelled out jalapeño pepper.
Wrap the jalapeño popper in 1/2 piece of sliced bacon. Secure with a toothpick.
Place on a baking sheet covered with aluminum foil. Bake for 30 minutes at 400℉.
Notes
Since these poppers are spicy, they pair well with sparkling wine.
