Mix all ingredients together except skirt steak.
Rub mixture over steak and refrigerate for 8 hours or overnight.
Bring meat to room temperature before grilling.
Grill until rare to medium-rare (3 to 4 minutes a side).
Don't overcook or meat will get tough.
Take off grill and cover with aluminum foil and let rest for 5 minutes before cutting.
Slice meat diagonally across the grain in thin slices.
