Greek Tzatziki

Ingredients

  • 2 med cucumbers grated
  • 3 tbsp fresh dill chopped
  • 3 cloves garlic minced
  • 1 1/2 tsp sea salt
  • 1 tsp white wine vinegar
  • 1 tsp olive oil
  • 18 oz plain greek yogurt
  • 1/4 tsp freshly ground black pepper

Instructions

  • Peel small stripes from cucumbers. Grate with a metal grater and place in a colindar. Squeeze the cucumber to release the moisture.
  • In a large bowl, place the garlic, salt, vinegar and oil. Mix
  • Add the grated cucumber, dill, yogurt, and pepper and stir to combine. Cover and chill in the refrigerator for several hours.
  • Once chilled, stir again before serving.
