Peel small stripes from cucumbers. Grate with a metal grater and place in a colindar. Squeeze the cucumber to release the moisture.
In a large bowl, place the garlic, salt, vinegar and oil. Mix
Add the grated cucumber, dill, yogurt, and pepper and stir to combine. Cover and chill in the refrigerator for several hours.
Once chilled, stir again before serving.
