A simple garnish of pineapple and mint is all the Tuk Tuk needs.

While visiting Siem Reap, Cambodia, Vicki and Skip went to dinner in a Tuk Tuk.  This is a common way for tourists to navigate the crowded, busy city.

They are called “Tuk Tuk’s” because that’s the sound the motorbike makes while it pulls the cart.  What does that have to do with martinis?  Actually, nothing at all.  We thought Tuk Tuk was a cute name for an Asian cocktail!

Tuk Tuk Martini

Ingredients

  • 2 cups pineapple juice
  • 3/4 tube lemongrass paste sold in produce section of grocery store
  • 1/3 cup fresh lime juice
  • crushed ice
  • 1 cup Absolut Citron vodka
  • 4 small fresh pineapple wedges
  • mint garnish optional

Instructions

  • In a medium saucepan, simmer the pineapple juice and lemongrass paste over moderate heat for 15 minutes; let cool. Strain the pineapple juice into a glass pitcher along with lime juice, stir and chill.
  • Fill the pitcher with ice, add the vodka, and stir. Strain into chilled martini glasses and garnish with pineapple and optional mint.

Grape Passion Martini

Ingredients

  • 2 ounces vodka
  • black grapes
  • 4 basil leaves
  • 1 ounce fresh lime juice
  • 1/2 ounce simple syrup either purchased or homemade*

Instructions

Martini

  • Place the vodka in a cocktail shaker.      
  • Fill the shaker 1/3 full with grapes.
  • Add basil leaves.
  • Muddle all the ingredients and double strain into a martini glass.

*Simple Syrup

  • One part sugar to one part water.  Place in saucepan and heat until it boils and sugar is dissolved.  Cool.  This syrup can be kept for months in a jar.
