• 3\/4<\/span> cup<\/span> red onion<\/span> diced <\/span><\/li>
• 1<\/span> red or orange bell pepper<\/span> diced<\/span><\/li>
• 1<\/span> tsp<\/span> jalape\u00f1o<\/span> diced<\/span><\/li>
• 6<\/span> ears of fresh corn<\/span> kernels removed (5 if large)<\/span><\/li>
• 2<\/span> Tbsp<\/span> unsalted butter<\/span><\/li>
• 1<\/span> tsp<\/span> kosher salt<\/span><\/li>
• 1<\/span> tsp<\/span> freshly ground pepper<\/span><\/li>
• 1<\/span> Tbsp<\/span> fresh chives<\/span> \u00a0minced<\/span><\/li>
• 1<\/span> Tbsp<\/span> fresh basil<\/span> minced (you can substitute any herbs you have in your home)<\/span><\/li><\/ul><\/div><\/div>\n

  Instructions<\/h3>

  • Heat olive oil in a large, non-stick skillet. \u00a0Cook onions until soft, about 5 minutes. \u00a0<\/span><\/div><\/li>
  • Add pepper and jalape\u00f1o and stir for several more minutes. <\/span><\/div><\/li>
  • Add the butter and allow to melt, then add corn, salt and pepper. <\/span><\/div><\/li>
  • Stir occasionally until cooked through, about 10 - 15 minutes.<\/span><\/div><\/li>
  • Top with herbs and serve.<\/span><\/div><\/li><\/ul><\/div><\/div>\n\n\n<\/div><\/div>\n
