• 2<\/span> Tbsp<\/span> unsalted butter<\/span><\/li>
• 1<\/span> tsp<\/span> minced thyme<\/span><\/li>
• 1<\/span> small onion<\/span> chopped<\/span><\/li>
• 1<\/span> garlic clove<\/span> minced<\/span><\/li>
• 2<\/span> Tbsp<\/span> tomato paste<\/span><\/li>
• 1<\/span> can<\/span> fire roasted tomatoes<\/span> 28 ounce<\/span><\/li>
• 1\/2<\/span> tsp<\/span> sugar<\/span><\/li>
• 4<\/span> cups<\/span> water<\/span><\/li>
• 2<\/span> Tbsp<\/span> sliced basil<\/span><\/li>
• Large cut croutons<\/span><\/li><\/ul><\/div><\/div>\n

  Instructions<\/h3>

  • Melt butter in a large sauce pan. <\/span><\/div><\/li>
  • Add thyme, onion and garlic. \u00a0Saut\u00e9 until onion is soft, about 5 minutes. \u00a0<\/span><\/div><\/li>
  • \u00a0Add tomato paste and continue stirring for 4 minutes.<\/span><\/div><\/li>
  • Add tomatoes, sugar and water. \u00a0<\/span><\/div><\/li>
  • Bring mixture to a boil, then simmer for 40 minutes. \u00a0<\/span><\/div><\/li>
  • Either use an immersion\/stick blender* directly in the pot or separate soup into batches and process in a blender. \u00a0Leave soup slightly chunky and return to pot.<\/span><\/div><\/li>
  • Add basil and simmer for another 10 minutes.<\/span><\/div><\/li>
  • Fill bowls with soup and top with croutons and parmesan cheese.<\/span><\/div><\/li><\/ul><\/div><\/div>\n\n
