The steak in this recipe is marinated in beer for hours, hence the “drunken” title.  We came across the recipe in the latest issue of Bon Appetite magazine and gave it a try with some Simple Celebration tweaking.  How about making tonight a taco night?  First, open a beer (off to a good start?).

Drunk Steak Tacos

Ingredients

  • 1 pound skirt or flank steak
  • 1 12- ounce bottle of Mexican beer
  • 4 Tbsp fresh lime juice
  • 1 tsp kosher salt
  • 1/4 tsp freshly ground pepper
  • 1 Tbsp olive oil
  • 1/3 cup chopped onion
  • 2 garlic cloves chopped
  • 2 large plum tomatoes
  • 1/2 chipotle chili in adobo, chopped
  • 3 Tbsp chopped fresh cilantro
  • 8 white corn tortillas
  • 1 avocado sliced
  • 1 cup Fresco cheese Mexican crumbling cheese
  • 8 lime wedges

Instructions

  • Combine beer, 1 Tbsp lime juice , salt & pepper in a resealable gallon bag.        
  • Add steak and combine well.  Chill for at least 3 hours.
  • Heat oil in a small skillet.  Add onion and garlic and sauté for 4 minutes.  Let cool.

Salsa

  • Heat up the grill and grill tomatoes until charred on all sides.  Once cooled, remove seeds from tomatoes.
  • Place tomatoes, onion mixture, 3 Tbsp lime juice and chipotle chili in a food processor.  Season with salt & pepper and pulse until smooth. Place in a small bowl.

Grilling

  • Remove beef from the marinade and pat dry.  Season with salt and pepper and grill until medium rare - about 3 minutes a side.
  • Let sit on cutting board for 10-15 minutes then thinly slice against the grain.
  •  Grill the tortillas about 30 seconds per side.

Assembly

  • Serve beef, salsa, cheese, avocado, lime wedges and tortillas on plates and bowls and let everyone make their own tacos.

Notes

We like to serve this with wedges of watermelon and of course, more beer!

Gingered Flank Steak

Ingredients

  • 3 lbs flank steak

Marinade

  • 1/4 cup mirin an Asian sweet cooking rice wine
  • 1/4 cup soy sauce
  • 1/2 cup vegetable oil
  • 1 Tbsp sesame oil
  • 1 Tbsp chili oil
  • 1/3 cup green onion chopped
  • 4 garlic cloves minced
  • 1/4 cup fresh ginger minced

Instructions

  • Whisk all marinade ingredients together.      
  • Score the flank steak.
  • Place in a glass dish or large ziplock bag and add marinade.  Marinate overnight or at least for four hours.
  • Grill and cook to medium rare (130-135 degrees on instant read thermometer).  Let rest for 10 minutes.
  • Cut flank steak against the grain.

Savory Steak Salad

Another low calorie, delicious recipe from A Simple Celebration!  This dish is great to serve for a family dinner or a dinner party.

Savory Steak Salad

Ingredients

  • 1 1/2 Tbsp fresh ginger minced
  • 4 garlic cloves minced
  • 1/2 cup + 2 Tbsp reduced-sodium soy sauce
  • 1/2 cup cilantro chopped
  • 1 pound flank steak sliced on the angle into 1/4" slices
  • 1/2 cup + 1 Tbsp extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1 Tbsp sesame oil
  • 1/4 tsp red pepper flakes
  • Freshly ground black pepper
  • 1/2 cup scallions sliced
  • 10 ounces mixed greens
  • 2 Tbsp toasted sesame seeds

Instructions

Marinade

  • Combine 1/2 cup soy sauce with ginger, garlic and cilantro.     
  • Toss the sliced beef with the marinade, and let sit in refrigerator for an hour and fifteen minutes.  
  • Bring to room temperature on counter for 45 minutes.

Vinaigrette

  • Whisk together the vinegar, sesame oil, peppers, 1/2 cup olive oil and 2 tablespoons soy sauce.  Set aside.

Steak

  • In a skillet, heat 1 teaspoon of olive oil over high heat.  
  • Remove the steak from the marinade and quickly sear for about three minutes making sure to not over cook meat (flank steak should be served medium rare).

Salad

  • Place greens and scallions on 4 large plates. Top with flank steak.
  • Add vinaigrette to the same skillet and cook, stirring for 1 minute.
  • Pour the sauce over the steak and greens.  
  • Top with sesame seeds.
