Easy Chicken Quesadillas

Leftover chicken?  This is a great way to use it up.  You could also make these with cooked shrimp instead of chicken.  Either way, they are a crowd pleaser for an appetizer, lunch, or dinner.  To make a complete meal, serve along with rice, a green salad, and tortilla chips.

Chicken Quesadillas

Ingredients

  • grilled chicken sliced
  • cream cheese thin layer
  • Mexican cheese grated
  • 4 slices avocado
  • 1 jar salsa
  • sour cream
  • 4 flour tortillas

Instructions

  • Place 4 flour tortillas on a flat kitchen surface.  Spread a thin layer of cream cheese on each tortilla.  
  • Add strips of chicken (the amount is up to you).
  • Place 4 slices of avocado on each tortilla.
  • Top with shredded cheese and another tortilla.  
  • Either grill quesadillas or pan fry until cheese melts.
  • Cut each in 6 to 8 triangles.

Notes

Serve with salsa and sour cream.
