Flavorful Grouper Fillets with a Crunch

This dish has great flavors and crunch; it will even please the “I don’t like fish” eaters in your family!

Grouper Fillets

Ingredients

  • 2 Tbsp olive oil
  • 1 jar salsa verde
  • 1/4 cup sliced green olives
  • 4 green onions sliced
  • 1/2 cup crumbled queso fresco cheese
  • 1 cup crumbled tortilla chips whole grained
  • 24 ounces grouper cut in 4 equal fillets
  • Kosher salt and fresh ground pepper
  • Minced cilantro

Instructions

  • Preheat the oven to 450°.       
  • Heat 1 tablespoon olive oil in a small skillet.
  • Add salsa verde to pan and stir for several minutes.
  • Mix salsa with the olives and place in a glass 9 X 13 pan. Make sure salsa covers most of the bottom of the pan.
  • In a small bowl, mix together the green onion, queso fresco, 1 tablespoon of olive oil and crumbled chips.
  • Season grouper with salt and pepper and place on top of salsa, turn over once to coat fish.
  • Top with chip and cheese mixture.
  •  Bake for 20 minutes and let sit for several minutes.
  • Garnish with cilantro.
